The easiest dinner you can make…
Well, maybe not the easiest, but it’s pretty darn easy and tasty!
Here’s what you’ll need:
INGREDIENTS
1 lb of chicken breasts
2 cups of broccoli
4 cups of red potatoes
1/4 cup olive oil + 2 tbps
2 tbsp diced onion
2 cloves garlic, minced
salt & pepper to taste
1-2 tsp smoked paprika (or regular paprika)
1/4 cup parmesan cheese
Mmmkay, get started by oiling your pan with 1 tbsp olive oil.
Then put your chicken in the pan and season both sides with paprika and salt and pepper. Just pinch the spice and sprinkle it over the breasts. If your chicken breasts are on the thick side, I would recommend butterflying them or just slicing them in half.
Next, chop up your veggies. I chopped my potatoes small so they would roast properly in the crowded pan. Then I put both the broccoli and potatoes in a bowl with 1/4 cup of olive oil, salt and pepper and mixed to coat my veggies well. Funny story, I had to have a friend tell me that’s what I was doing wrong with my roasted veggies, I wasn’t pre-coating them in a bowl. So, this step is important!
Now, arrange the veggies around the chicken and sprinkle minced garlic and chopped onion on top. Then mix both down, so they aren’t on top. I didn’t mix these with my potatoes and broccoli because I also wanted them on top of the chicken for flavaaaa.
Finally, coat your pan with parmesan cheese. I just eyeball here, and coat until its covered but not drowning in parmesan, but I would say about 1/4 cup. You could also omit this all together if you wanted to, but let’s be honest, parmesan is delish! Drizzle that last little bit of olive oil top and bake at 400 degree for roughly 30-35 minutes. If your broccoli starts to burn, you can put foil on top.
Boom, dinner served!
