Pumpkin pancakes

Amazing & healthy! A hard combo to come by. I totally felt guilty eating these not so guilty pancakes.

You will need:
3/4 cup oats ground into flour
1 tsp baking powder
1/4 tsp salt
2 tsp brown sugar
Stevia extract (optional to taste)
2 egg whites
1 tbsp unsweetened almond milk
2 tbsp pumpkin purée
1 tbsp light cream cheese

Mix the dry, blend the wet and put them both together! Super simple of course. Cook over medium heat 3-4 mins each side.

For the toppings:
1 tbsp light cream cream cheese
1 – 2 tsp almond milk

Mix and heat for 30 seconds

1 tbsp peanut butter (I used chocolate peanut butter)
1-2 tsp almond milk

Mix and heat for 30 seconds.

This was my secret weapon! Thank you trader joes. I like to top each individual cake with the cream cheese sauce and then drizzle the chocolate over the whole stack. I also sprinkled dark chocolate chips, because its Saturday 😉
