The second installment of my clean thanksgiving series is green bean casserole. Definitely a favorite in my family!
You will need:
2 tbsp olive oil
2 tbsp whole wheat flour (coconut for GF)
1 small onion
1 stalk of celery
1 tsp garlic powder
1 1/4 cup vegetable broth
Salt and pepper to taste
4 cups green beans (canned work well)
2 slices of whole wheat bread
Preheat oven to 350. Chop onions and celery and cook with olive oil over medium high heat. Cook until tender, stir in flour. Stir until the flour browns and slowly add broth, stirring continually. Mix in the green beans and spread in an 8×8 pan.
Toast the bread well then blend into breadcrumbs. Add a tsp of garlic powder and salt if you like to season. Sprinkle the breadcrumbs on top and bake for 30 minutes.
