Banana Muffins

You will need:

1 ripe banana
1/4 cup coconut flour
1 cup rolled oats
1/4 cup whole wheat flour
2 1/2 tsp baking powder
1/2 tsp baking soda
Dash of salt
1/4 cup brown sugar (omit for sugar free)
Stevia extract to taste
1 egg
3 egg whites
3/4 cup low fat cottage cheese
1 cup unsweetened almond milk

Preheat oven to 350. Mix the dry ingredients. Then the wet ingredients. Mix the two together! Pour into 12 prepared muffin cups and bake for 20 minutes.

Let cool before eating 🙂 I like to top these with peanut butter, cream cheese or jelly.
