Mac-n-cheese please

20131208-170418.jpgThis was definitely a winner in our house! Going to be a favorite for sure.

This recipe is wheat free and can be made with or without beef. Full of dense nutrition and much lower in calories and fat than traditional macaroni and cheese or its close counterpart, hamburger helper.

Pair with veggies for a balanced meal!

You will need:

1/4 cup olive oil
1/4 cup oat flour
2 cups unsweetened almond milk
2 cups go veggie cheese (soy cheese alternative)
1 lb lean ground beef
Salt and pepper to taste
8 ounces quinoa pasta

Start by heating olive oil over medium high heat. Add flour and stir continuously. Slowly add milk stirring the entire time.

Bring to a boil and stir for two minutes. Reduce heat and stir for another 10 minutes.

Add cheese slowly and stir to mix.

Remove from heat and set aside.

Cook pasta according to package and brown your ground beef.

Mix beef, pasta and cheese sauce together and enjoy!
