Peanut Butter Cookies

Who doesn’t love a warm peanut butter cookie! Take a tip from me and use Trader Joe’s Cookie Butter in place of peanut butter and blow your mind.

These cookies are crisp and satisfyingly crunchy.

The recipe makes a large batch for cooking for a crowd or freezing the dough for later!

What You’ll Need

1 1/2 cup wheat flour
1/2 tsp baking soda
1 cup peanut butter
2 eggs
1/4 cup coconut oil
1/2 cup coconut sugar
1/4 cup granulated sugar
1 tsp vanilla extract

Preheat your oven to 375. Mix the flour and baking soda well.

Cream the oil and sugar together. You may need to soften the coconut oil first to make sure it blends well.

Beat the eggs and vanilla, add to the oil and sugar. Mix in the peanut butter.

Slowly add the flour to the peanut butter mixture.

Roll into 1 inch balls and press down with a fork.

Bake for 8-10 minutes!

Makes about 2-3 dozen cookies!
