clean and colorful pasta salad: healthy recipe

In a bind for what to bring to a cook out, or pair with your burgers. Give this pasta salad a go.

What you’ll need:

  • 16 ounce box whole wheat penne pasta
  • 2 cobs of corn
  • 2 cups grape tomatoes
  • 1/4 cup chopped onion
  • 2 small zucchini

for the dressing:

  • 1/2 cup olive oil
  • 2 cloves garlic
  • 1 tbsp balsamic vinegar
  • juice of one lemon
  • 1/2 cup parmesan cheese
  • 1 tsp mrs. dash table blend
  • sea salt and pepper to taste

Bring a pot of 4 quarts water to boil and add pasta. Cook for about 8 minutes and rinse with cold water, set aside. Meanwhile, chop your tomatoes, onion and zucchini and cut your corn from the cob.

Mix the chopped veggies with the pasta.

Make your dressing. Crush your cloves of garlic and mix everything together in a small bowl.

Add dressing to pasta mixture and you’re done. Let chill for at least 2 hours before serving.
