I’m always on the hunt for ways to spice up dinner time. This unique mexican dish is a unique take on spaghetti!
What you’ll need:
- 8 oz brown rice pasta (or whole wheat)
- 1 tsp olive oil
- 1 lb ground turkey
- 3 tomatoes
- 1 package frozen pepper and onion mix (or you can chop one medium onion and one green pepper)
- 1 1/2 tsp cumin
- 2 1/2 tsp chili powder
- salt and pepper to taste
- 1 1/2 cup of water
First, put your onion, peppers and ground turkey in a skillet and cook until browned.
Heat tsp of olive oil in a skillet and add your spaghetti pieces. Cook until browned, stirring constantly!
Once browned add you tomatoes and turkey mixture to the spagetti.
Add cumin, chilli powder, water and salt and pepper. Reduce heat to medium low, cover and simmer until liquid is absorbed and spaghetti is soft (about 10 mins.)
Makes four servings, I garnished mine with a dollop of nonfat greek yogurt and avocado slices.
