I was browsing Pinterest the other day, looking for something to cook for dinner. I came across a crispy chicken and creamy lemon pasta recipe that looked amazing! Sadly, I lacked the necessary ingredients to make that recipe, but it inspired me to make this dish from what I had on hand!
Since I had a packet of Onion Soup Mix in the cabinet, which I think makes just about anything bomb, I decided to use it for the breading on the chicken. Just as I suspected…the Onion Soup Mix made for deeeeeelish chicken. Since this recipe is pretty much pan-fried in butter, I wouldn’t call it light, but it sure is a delicious occasional indulgence. Oh and it was really easy to throw together.
Indulge with me a little.
Ingredients:
1 lb chicken
1 packet Trader Joes Onion Soup Mix
1/4 cup whole wheat flour
6 tbsp butter, split
10 ounces quinoa pasta
1/4 cup olive oil
2 tsp garlic powder
1 tsp salt
1/4 cup white cooking wine
1/4 tsp parsley
1/2 cup grated parmesan cheese
1. Pour the packet of Onion Soup Mix and wheat flour onto a plate and mix well, set aside.
2. Prepare your pan to cook the chicken in by heating 3 tbsp of butter in a skillet over medium high heat.
3. Place a chicken breast into a ziplock bag and pound with your hand until it is fairly even in width.
4. Dredge the chicken breast through the onion soup and flour mix. Coat both sides and place in your skillet. Repeat until all of your chicken breasts are coated and cooking. Your chicken will cook for roughly 20 minutes or 10 minutes on each side.
– While the chicken cooks –
6. Prepare your quinoa pasta according to package directions.
– Make the sauce –
7. Heat olive oil and the remaining 3 tbsp of butter over medium heat.
8. Mix garlic powder, parsley, salt and cooking wine into the oil.
9. Add parmesan cheese and simmer on low until your chicken and pasta are fully cooked.
Toss your pasta in the sauce and top with a chicken breast, sprinkle with a little bit of parsley if you wish!
