I love Mexican food, if you haven’t already guessed that! What I love more, is making healthy Mexican food, yay yay. Guilt free and yummy.
For this baby and husband approved recipe you will need:
- 1lb ground turkey
- 1/2 cup chopped peppers
- 1/2 cup chopped onion
- 1/2 cup chopped tomatoes
- 1/2 cup corn
- 1/2 tsp cumin
- 1 1/2 tsp chili powder
- salt and pepper to taste
- 1/4 cup non fat greek yogurt
- 1/4 cup low sodium salsa (I use Trader Joes brand)
- 1/4 cup reduced fat cheddar
- 4 whole wheat tortillas (I used Trader Joes brand)
Pre heat your oven to 350. Toss your chopped peppers, onion and tomato into a pot over medium high heat. When your onions and peppers begin to soften add your ground turkey and corn. Brown the turkey and add your spices with a 1/4 cup of water, cover and let simmer for about 10 mins.
Then, layer two tortillas in a 13 x 9 baking dish top with meat mixture. pour salsa over meat mixture. Top with two more tortillas, then spread greek yogurt on top of tortillas. Sprinkle with cheese and put into the oven for about 10 minutes to melt the cheese.
I served mine with chopped spring mix and avocado on top!
