Sweet Potato Shepherd’s Pie

Can you believe tomorrow we will be in the last month of 2015?! Get your new year off to a healthy start early by making simple changes to your current eating habits now. 🙂 For example, you can boost the nutritional value on a traditional family favorite by using sweet potatoes in place of a plain ol’ russet potatoes for a recipe that is both delicious and packed with Vitamin A (which is good for eye health)! This version has also been made using spinach (my favorite and one of the most versatile ingredients ever) cranking up the iron content in this tasty meal! 🙂
