I was browsing through some old pictures and found a few old recipes I had posted on an old instagram of mine that I had forgotten all about!! I was super excited to find them and be reminded how much I loved cooking with coconut flour!
Coconut flour is different to work with than regular or oat flour. It requires a lot more liquid as the coconut flour soaks it right up! However, is is gluten free if you have a sensitivity and low carb!
This was one of my all time favorite things to make. I was actually searching for this one in particular because I had forgotten how to make it! It tastes seriously like chocolate cake!! Very moist and delicious.
Just combine all the dry ingredients, then the wet, then mix together. You can make it into cupcakes or into a prepared 9×9 pan! Bake at 375 for about 10-15 mins or until the toothpick comes out clean!
I used to love making little egg white “biscuits” with this recipe. It also makes a great topping for chicken pot pie and if you add a little stevia, cobblers! Directions are on the picture!
This is not technically a recipe, but an easy throw together dinner or lunch. It is one frozen udi’s gluten free pizza crust. Topped with fat free cottage cheese, sliced tomato and spinach. Sprinkles with basil and garlic!
