Banana Bread

This one prompted a ‘mmmmm’ from baby man with his first bite…so it’s fair to say, it’s a winner!

Although this is relatively low in fat it is still very moist!

You will need:

3 ripe bananas
2 egg whites
1/4 cup nonfat Greek yogurt
1 tbsp coconut oil
1/4 cup coconut sugar or brown sugar
1 dropper full stevia extract
1 tsp baking soda
1 1/3 whole wheat flour

Preheat oven to 325. Mix together your banana, egg whites, sugar, stevia, yogurt and coconut oil until smooth.

Sift together the flour and baking soda.

Pour the wet ingredients into the dry ingredients.

Pour into a prepared 5X7 loaf pan and bake for 45 mins to an hour.

Cream cheese icing: (1 serving)

1 tbsp light cream cheese
1 tsp almond milk
2 drops stevia extract, blended.

I topped mine with a little cinnamon and the cream cheese icing.
