Any kind of marshmallow cereal bar is a weakness for me. I remember one sleepover as a kid, my friends and I made a pan of marshmallow treats and ate them all that night. Not that you should make a habit of eating an entire pan of treats in one night, but – then again, you only live once.
Cereal Bars
My love for the combination of marshmallow + cereal has continued into adulthood, and while I don’t eat entire pans in one sitting anymore, I do make them with all kinds of different cereals whenever a fun occasion arrives. The fun occasion this time? Summer. I picked up a box of NEW Blueberry Cheerios at Walmart, extra bags of marshmallows (because the kids were bound to eat a little or a lot along the way) and we went to work.
Blueberry Cheerios are brand new, and if you ask the boys and I, they’re darn good. They’re made with real blueberry puree and the goodness that you already know and love from Cheerios. They make a great breakfast, and of course, a great marshmallow treat bar!
Ingredients
- 4 tbsp butter
- 5 cups mini marshmallows
- 6 cups Blueberry Cheerios
- 12 ounces white chocolate (optional)
Directions
Making a marshmallow cereal bar is simple, and it’s the same classic recipe I’m sure you’ve made before.
Start by melting the marshmallows and butter in a large saucepan. Also, keep your little brother from stealing all the marshmallows.
Measure out six cups of Blueberry Cheerios and mix them with the marshmallows and butter. Spill them everywhere in the process and laugh about it if you’re feeling carefree.
Next, press the marshmallow and cereal mix into a pan and let cool. Then, cut them into squares. Melt the chocolate in the microwave using the 30 seconds on, and then stir, repeat method. Then dip each square into the chocolate and put on wax paper to cool. (Momma did this part, hot chocolate and little boys isn’t a good combo).
After they’re cool, go ahead and enjoy! If you’re not a huge white chocolate fan, I recommend leaving that part off, my boys preferred the bars without it.
If you’ve ever cooked with kids, you know it’s almost like herding cats. It’s fun, but in our house it involves multiple spills, laughs, maybe a fight or two, and of course the little one is going to eat things that fall on the floor. In this case, it was the marshmallows. As messy as it is, it’s fun, and tasty, the boys would agree.
In case you want the directions in a nutshell here you go:
- Melt butter and marshmallows together in a large sauce pan.
- Mix cereal in with the butter and marshmallows.
- Press the cereal and marshmallow mix into a prepared pan and let cool.
- Once cool, cut into equal portions.
- Melt the chocolate in the microwave using a heat for 30 seconds then stir and repeat method.
- Dip each square into the chocolate and put on wax paper to cool.
- Once cool, enjoy!
