There is nothing in this world like Mom’s cooking. I miss the days of coming home from school and helping her cook up dinner. We would talk about our day, laugh a little and she would show me a thing or two about cooking. I loved our time together. My mom wasn’t a gourmet chef and most of what she cooked was simple and easy, perfect for passing along.
One of my favorite recipes of her’s is Chicken and Rice. I think we ate Chicken and Rice more than anything in my house growing up and it’s still my favorite! My older son will soon be five and has recently started to love helping in the kitchen. It has become a special time for him with either mom or dad, where he can help out, learn about cooking, and learn about the nutrients we put into our bodies! The other plus side, when he helps cook dinner, he is more likely to at least try it! Being a notorious picky eater, we have tried everything to get him to expand his tastes, nothing had worked quite like letting him help out in the kitchen.
On this particular night, I was feeling nostalgic and pulled out Mom’s old recipe for Chicken & Rice for us to make.

Full disclosure, Mom used to use good old canned soup to mix in her chicken and rice, but I like to make most of the recipe from scratch instead. You can substitute two cans of cream of celery or cream of onion soup for the sauce if you like.
What You’ll Need
for the chicken
1 lb of chicken breasts
1 tbsp of butter, melted
salt and pepper to taste
1 tbsp Worchestershire Sauce
for the sauce
3 tbsp of butter or olive oil
1/2 cup of chopped onion
1/2 cup of chopped green and red pepper (I used a tri-colored frozen mix)
1 clove of garlic, minced
1/4 cup of flour
2 cups of chicken broth
1 cup of skim milk (or almond milk)
salt and pepper to taste
2 bags of Uncle Ben’s Ready Rice in the flavor of your choice (I used Brown & Wild)
We grabbed our ingredients at Wal-Mart because they were having an #UncleBensPromo on Ibotta. We used Ibotta to receive $0.75 off of Uncle Ben’s Ready Rice, and got to work!
Directions
Start with your chicken. Turn your oven on to a high broil. Place the chicken breasts on a baking sheet and drizzle melted butter over the chicken. Sprinkle with salt and pepper and drizzle with Worchestershire sauce. Pop in the oven, for 8 -10 minutes. (You will need to flip it again and cook for an additional 8-10 minutes).

While your chicken cooks, get started on the sauce. Toss 3 tbsp of butter in the pan and laugh about it.
Then add your chopped onion and peppers. Cook for 1 minute and add minced garlic. Cook for about 4-5 minuets, until the veggies are tender.

Sprinkle flour over the butter and vegetable mix and stir away. (This is a fun part for your little to do, if they’re old enough to be safe around a stove).
Continually stir the pot until the flour mix is nice and brown.
Mix your chicken broth and milk together and slowly start to pour 1/4 of it into the mix.
Stir until it thickens, then pour a little more. Continue to stir and pour the remaining milk and broth mix. Stir until it thickens to a nice, creamy bubbly mix.

Add salt and pepper, then turn stove to low. Now, pop your rice into the microwave as directed.
While the rice cooks, chop your chicken.
Now, that everything is finished, mix it all together! Stir the sauce, chicken and rice all together and season with additional salt and pepper to taste.

Pair with a fresh salad or steamed veggies.
