Healthier Grilled Cheese

The grilled cheese is a childhood favorite and is often requested around our house. To keep with the theme of family friendly, it doesn’t get any friendlier than a grilled cheese sandwich. Made traditionally with cheese and buttered bread, our old favorite is a saturated fat trap. So, we made a few simple swaps and paired this baby with a big ol pile of veggies to up the nutrient content of the meal!

What You’ll Need:

(one grilled cheese)
Coconut Oil (spray)
1/4 cup soy cheese shreds
2 slices of whole wheat bread
1/4 tsp garlic powder

Start by heating a skillet over medium high heat and spray with a little bit of coconut oil. Coat two slices of bread in oil and sprinkle with garlic powder. Place the bread oil side down in the pan and top with the shredded cheese alternative. Top with the other slice of bread and cook like a regular ol grilled cheese sandwich. Typically 2 minutes per side until the bread is golden and your cheese is melted.

We paired ours with roasted broccoli and kale with feta!
