Crisp, moist and full of flavor…the chicken that is! I stuffed my chicken into a quesadilla but you can also eat this plain, in a burrito or taco, whatever your heart desires!
What You’ll Need:
1 lb chicken
2 tbsp honey
2 tbsp olive oil
1/4 tsp cumin
1/4 tsp garlic power
1 lime
salt and pepper to taste
2 cups reduced fat colby jack cheese
4 Tortillas (I used Ezekiel)
Directions
Set oven to broil. Mix honey, oil and spices in a small bowl. Lay chicken flat on a pan and coat with half of the honey mixture. Broil one side for 5 minutes. Take the chicken out, turn over and coat with the rest of the honey mixture. Broil an additional 5 minutes. Take out and sprinkle with lime juice.
Lay one tortilla flat and coat half with a layer of cheese, top with 1/2 of a chicken breast. Fold the tortilla in half and place in a quesadilla maker, panini maker or press into a skillet. Cook until both sides are crisp and the cheese has melted.
Top with salsa, greek yogurt and guacamole!

Chili Roasted Corn:
2 cups of frozen corn
2 tbsp olive oil
2 tbsp chili powder
salt and pepper to taste
Mix all ingredients well and place under broiler for 5 minutes.
