Light Corn Casserole

The thanksgiving series continues! This recipe is not exactly super healthy. However, it is lighter than your traditional corn pudding and is a great light alternative to serve to guests who may not be accustomed to the taste of ‘healthy meals’

You will need:

3 cans no salt added corn
1 package of light cream cheese or Greek cream cheese is even better
1/4 cup unsweetened almond milk
1/4 cup 2% cheddar cheese.
1/4 tsp cayenne pepper
1/4 tsp garlic powder
Salt and pepper to taste

Start by preheating your oven to 350. Melt the cream cheese with milk over low heat.

Add in your spices and continue to stir until the cream cheese has melted.

Stir in the corn and transport to an 8X8 dish.

Sprinkle with cheese and pop in the oven for 20-30 minutes, until bubbly and brown.

Surprise your guests with a light and delicious thanksgiving side dish!
