Monday Menu Mix: Week 3

Welcome back to the Monday Menu Mix! We’re celebrating #MeatlessMonday every day this week by bringing you an internationally inspired vegetarian dinner menu line-up. If you’re a hardcore carnivore you might not think this week is not for you, but trust us, there is so much flavor to be had in veggie packed meals and we just know you’ll love them!

MONDAY | Hummus & Sautéed Vegetable Flatbread Wraps
RD Tip: For all you hummus lovers out there… 😉

TUESDAY | Sweet Potato & Chickpea Curry
RD Tip: Using chickpeas instead of chicken gives you the protein without the meat.

WEDNESDAY | Edamame & Walnut Ravioli with Spinach Mushroom Sauté
RD Tip: You don’t have to just eat fish to get heart healthy omega-3’s. Walnuts and soybeans (edamame) both are good sources of this essential fatty acid!

THURSDAY | Slow Cooker Ethiopian Stew
RD Tip: Leave out the chicken for a savory vegetarian stew! A little goes a long way with this spicy recipe so when I made this for my house, there was a lot leftover. I froze a large portion of it to enjoy at a later date and it tasted just as good after being frozen as it did when it first came out of the crockpot.

FRIDAY | Chipotle Black Bean Baked Tacos
RD Tip: Easy to make and delicious right down to the last bite…even your pickiest eater will enjoy!

    For sure! And the Ethiopian stew has chicken originally in the recipe so if he likes the spicy then maybe he would like that.
