It’s no secret around here that I don’t love to cook. However, I’ve also shared with you that lately, I’ve been challenging myself to cook more! We eat out way too much in our house, and it was time to make a change. I’m happy to report that so far so good, and for the last month I’ve enjoyed cooking dinner nearly every single night!
The key for me is variety. I get stuck in ruts and don’t know what to cook and get bored eating the same thing over and over again. So, I’ve been scouring cookbooks and pinterest to get ideas that are not only simple, but just as delicious as the meals I like to eat out.
In comes these baked Roast Beef and Cheddar Sandwiches. They’re simple to make, but not simple in taste. The key is in the details. I make them with quality ingredients – from the bread, to the meat, to the cheese. The better the ingredients, the better the sandwich!
I started off with bakery fresh onion and poppyseed buns from a local grocery store and grabbed a good quality mild cheddar, and Bistro Favorites 100% Natural Roast Beef. This natural roast beef is made from high-quality cuts of whole muscle meat, in small batches. It’s hand rubbed with spices and seasonings, 100% natural, and free of nitrates. It is so GOOD! I could eat it straight from the package as a snack. They make other gourmet varieties as well: Rotisserie Seasoned Turkey Breast, Uncured Black Forest Ham, and Uncured Peppered Beef, but on this particular day, the natural roast beef was speaking to me.
Ingredients
makes 4 sandwiches
4 onion & poppyseed buns
12 ounces (2 packs) Bistro Favorites 100% Natural Roast Beef
8 slices of mild cheddar cheese
4 tbsp mayonnaise
Instructions
1. Preheat your oven to 350 degrees.
2. Line a cookie sheet with parchment paper.
3. Cut buns in half, if they aren’t already cut.
4. Spread a little bit of mayo on the bottom bun, place on the pan, and top with one slice of cheese. Repeat with other buns.
5. Top the cheese with 3 ounces of Bistro Favorites 100% Natural Roast Beef (or pile it on to your preference).
6. Top with another slice of cheese.
7. Spread a little mayo on the top bun, then place it on top.
8. Bake at 350 degrees for 15 minutes, until the cheese is melted.
That’s it! If you want to make a sandwich for one, it’s easy to scale this down and melt everything together in a toaster oven instead of the oven. The buns I bought that day were huge, I could only eat half, but that just meant leftovers the next day! In a nutshell, they’re so delicious. I’ll be making these for dinner or lunch again!
