Shepherds Pie

The best recipes always happen when I have no idea what to make for dinner. I was in the mood for something different and remembered an old favorite I recreated healthy last year. Here is that beauty! I am sure glad I remembered this.

You will need:
1 lb lean ground turkey
1 small onion
1.5 cup mixed vegetables
1 small onion
3 large sweet potatoes
3/4 cup low sodium chicken broth
1 tbsp ketchup
1 tbsp Worcestershire sauce
3 tbsp whole wheat flour
Mrs. Dash table blend
Salt and pepper to taste

Preheat your oven to 375.

If you’re lazy like me, poke holes in your sweet potatoes and microwave them for six mins. Flip over, poke more holes and microwave another four mins, or you can peel, chop and boil until softened.

Chop the onion and toss into your pan. Add the ground turkey. Once the turkey is fully cooked and the onions are soft, add the mixed vegetables along with the broth, ketchup, Worcestershire and mrs. Dash. Bring to boil.

Stir in the flour. Let boil, then reduce to low and simmer for about ten minutes. Taste and season with salt and pepper if needed.

While your meat mixture simmers. Take the potatoes out of the microwave and scoop the insides into a bowl. Mash.

Pour the turkey mixture into a 9 x 9 dish and top with sweet potato.

Bake for 20 mins. Enjoy!
