My hubby’s all time favorite meal is a sloppy joe casserole. Manwich style meat, rolled between crescent dough and lots of cheese.
Well, this mamma is all about a treat from time to time but wants to offer health over hearty whenever I can.
So, I took to the kitchen and whipped up a similar yet healthier version of his old favorite.
For this recipe, you will need:
1 lb lean ground beef
1 green pepper
1 clove garlic
1 tablespoon mesquite seasoning (I used trader joes, African Smoke)
1/4 cup brown sugar (which you can reduce, I will next time)
2 tbsp tomato paste
1 can 15oz tomato sauce
1 tbsp red wine vinegar
1 tbsp Worcestershire sauce
3 whole wheat tortillas
1-2 cups GoVeggie! Cheese
Start by preheating your oven to 350. Gather your ingredients and prechop your pepper and garlic.
Toss your beef into a pan and brown. Add the brown sugar and mesquite spice to your meat and mix. Pour in the vinegar and Worcestershire along with you peppers and garlic. Reduce heat and cook for about 5 minutes until your peppers are tender.
Add the tomato sauce and past and simmer for an additional 5 minutes.
Once your ‘sloppy joe’ mix is complete, start layering. In a 9×9 dish lay one tortilla on the bottom. Pour the meat over the tortilla in a thin layer. Add the veggie cheese and another tortilla. Continue layering until you are out of meat mix. Sprinkle cheese on top and bake for 20 minutes, until bubbly.
I served mine with guacamole! Strange, but delicious!
