Thank you so much for everyone who participated in my healthy breakfast contest on Instagram. Since I am always eating oatmeal these days, I really wanted to compile a few more wonderful breakfast ideas! You girls sure didn’t disappoint.
Egg White Muffins: @kaciemarie83 – Kacie is a current challenger of mine and is sweet as pie, she submitted these quick and convenient egg white muffins.
Mix, 8 whole eggs or 2 cups of egg whites with 6 slices of cooked turkey bacon. Add cheese, veggies and spices of your liking. Pour into a prepared muffin tin and bake at 300 for 18-20 mins. To reheat microwave for 30 seconds.
Pancakes: @chasethelifestyle- I was very intrigued to see this lovely contributor was only 15. Way to go girl on starting a healthy lifestyle early, at 15 I was starving myself and downing diet sodas to stay skinny. Her healthy pancake entry seems so simple and delicious, I had to share.
Mix one chopped banana and two egg whites in a blender. Add mix ins of your choice. Then cook just like a normal pancake (over medium low heat, 4 mins a side). She added blueberries to this mix and topped them with a little fat free yogurt, and berries melted with a tiny bit of honey and melted for 10 seconds in the microwave.
Carrot Cake Pancakes and Carrot Cake Smoothie: @sarahannsweeney- This entry was two fold, you can start with just the carrot cake smoothie, or add some flour to make pancakes, or have a little of both. Choices, i love it!
For the smoothie: Blend one cup non fat greek yogurt, one cup of chopped carrot, pineapple and nuts to taste, pumpkin pie spice and unsweetened almond milk, blend.
For pancakes: add flour (I recommend oat flour or whole wheat) to pancake batter consistency. Cook it up like a regular pancake!
Fruit & Yogurt: @jennacopper – Another versatile and quick breakfast by Jenna. Her favorite is 1/2 cup plain greek yogurt, fruit of your choice (1/2 banana, strawberries, blackberries, blueberries, etc.) tsp almond slices and one packet of stevia!
Delicious and quick! A commenter suggested adding egg whites on the side for a little protein boost, not a bad idea 🙂
Egg Whites + Fruit: @fit_me95 – Her favorite healthy breakfast is egg white cooked up omelet style and paired with berries. You can flavor egg whites with just about anything, cinnamon and stevia for example. Also, she has some serious Instagram photo skills, right?!
