Veggie & Egg White Breakfast Bake

I made this bake the other day with the goal of making a light and heart healthy breakfast bake to enjoy with my friend over Sunday brunch. Mission accomplished!!! The prep work for this bake took me maybe 10 minutes max.
I used my grandma’s antique ceramic baking dish to make this recipe (that does not indicate its size) but you can use any medium sized baking dish and adjust ingredient amounts to your liking based on its size.
