A Very Valentine Monday Menu Mix

Tomorrow is the day! The day of hearts, kisses and ooey-gooey-love. If you and your sweetheart are planning on making a date of it at home instead of fighting crowds of other lovebirds then we have the perfect line-up for you. Let’s kick it off with a look at our special Valentine’s menu.

Raspberry Chicken

Beet, Garlic & Onion Quinoa
Serves 2

Ingredients:
3/4 cup dry quiona (cook in 1.5 cups of water)
1/2 cup pureed beets
1/4 cup red onion, cut into thin slices
2 cloves of garlic
1 Tbsp olive oil

Directions:
Cook quinoa per directions on package using 1.5 cups of water for 3/4 cups of dried quinoa to yield 2 cups of cooked quinoa.
While quinoa is cooking, heat up 1 Tbsp olive oil in a skillet over low-medium heat. Add garlic and red onion, cooking until onions are tender. Remove from heat.
Once quinoa is done, remove from heat then add beets and onion mixture to pot, stirring until blended.

Field Greens With Goat Cheese & Walnuts with Homemade Vinagrette

Ingredients:
2 cups fresh mixed greens (I used a combo of Spring Mix and Kale)
2 Tbsp walnut pieces
2 tsp goat cheese crumbles
2 Tbsp homemade vinaigrette dressing

For the vinaigrette
1/4 cup olive oil
2 Tbsp red wine vinegar
2 tsp honey
1/4 tsp dried basil

Directions:
Prepare vinaigrette my mixing together ingredients. In a large bowl toss together greens with dressing until evenly coated. Divide evenly between two plates and top each salad with 1 Tbsp walnuts and 1 tsp goat cheese. There will be vinaigrette leftover.

And for dessert…
Raspberries & Strawberries Topped With Shredded Coconut

Ingredients:
1 cup strawberries, cut up into pieces
1 cup raspberries
2 tsp sweetened shredded coconut

Directions:
In two small bowls put a mix of 1/2 cup of strawberries and 1/2 cup of raspberries then sprinkle each with 1 tsp of coconut.

Don’t worry we didn’t forget about the rest of the week!!

MONDAY | Healthy Black Bean Tostadas With Cilantro Sauce
RD Tips: Low sodium black beans & skip the tsp of salt.

WEDNESDAY | Crockpot Spicy White Turkey Chili
RD Tips: Select lean ground turkey. Cut back on sodium by using frozen lima beans in place of canned as well as “no salt added” broth and beans.

THURSDAY | Oven Roasted Sea Bass With Asparagus & Mushroom
RD Tip: Choose a low sodium soy sauce.

FRIDAY | Mediterranean Baked Sweet Potatoes
RD: This stuffed sweet potato recipe is an entire meal in and of itself, right down to the cherry (tomatoes) on top! Chickpeas are packed with protein and sweet potatoes provide a great source of fiber when eaten skin and all.
