Happy Monday and happy five nights worth of menus!!

MONDAY | Garlic Zucchini Pasta
So Says Your RD: This was the first time I made “voodles” (vegetable noodles…isn’t that cute? I heard that term somewhere and thought it was so cute!). It was so. freakin’. easy. I just used a julienne peeler – takes no time at all. The best thing about it is it costs way less and takes up way less space than a spiralizer. This recipe is delicious and makes for a wonderful alternative to pasta. Not only does it take probably just as much time as it would if you were to cook pasta noodles but you’re getting so many more servings of veggies so its an all around win!
TUESDAY | Sheet Pan Honey Mustard Salmon & Rainbow Veggies
So Says Your RD: This dish has it all, heart healthy omega-3’s from salmon and an assortment of vitamins and minerals provided by a full rainbow of veggies.
WEDNESDAY | Cilantro Lime Chicken with Avocado Salsa
So Says Your RD: The lime marinade gives the chicken so much flavor while the avocado provides the cherry on top! The second best part about this avocado salsa is the dose of heart healthy fat you get from it.
THURSDAY | Slow Cooker Stuffed Pepper Soup
So Says Your RD: All the deliciousness of a stuffed pepper, in an easy, leave it and forget about it soup! As always, choose a “no salt added” tomato sauce to save on the sodium.
FRIDAY | Sweet Potato Pizza with Kale & Carmelized Onions
So Says Your RD: This recipe is your ticket for a healthy alternative to pizza delivery Friday
I just pinned 3 of these! I love incorporating more recipes into my rotation and these are great ones! My family will love the avocado chicken and the zoodles recipes! Yum!
Yay, that’s awesome! I’m so glad to hear you got something useful out of this week’s menu mix. 🙂
