The real star of this show is the cream cheese frosting. The combination of the moist muffin and frosting feel like an indulgence, but it’s healthy!
You will need:
1/4 cup coconut flour
1/4 cup whole wheat flour
1/4 cup pb2
1/3 cup rolled oats
1 tbsp baking powder
Dash of salt
2 tbsp maple syrup or brown sugar
1/4 cup applesauce
1 cup unsweetened almond milk
Stevia extract to taste
1/2 cup mashed banana
1 egg
3 egg whites
2 tbsp peanut butter
1 tsp vanilla
Start by preheating your oven to 375. Mix the dry ingredients. Then the wet ingredients. Mix until combined.
Prepare a muffin tin and fill 12 cups 3/4 of the way.
Bake for 15-18 mins.
For the frosting: (one muffin) I frost one at a time so I can store the others.
1/2 tbsp Greek cream cheese
1/2 tbsp peanut butter
1 tsp coffee or almond milk
Few drops of stevia extract
Blend until smooth.
I topped mine with dark chocolate chips!
if I used peanut butter instead of pb2 would everything still be the same measurements?
I haven’t personally tried that yet, but if you replace peanut butter for pb2, I would reduce the amount of milk by 1/4 cup. If the mixture seems to soupy add more wheat flour ๐
