Another pancake rendition! Delicious and full of fall flavor.
You will need:
1/3 cup rolled oats
1/3 cup coconut flour
1 tsp baking powder
2 tbsp brown sugar
Blend the dry ingredients
Then add:
1 egg, 2 egg whites
3 tbsp cottage cheese
1/4 cup applesauce
1 tsp cinnamon
1 tsp vanilla
Mix until smooth, cook over medium high heat.
For the topping:
1 apple, sliced
1/4 cup water
1 tsp cinnamon
1 tbsp pecans
1 tsp maple syrup
Boil until apples have softened
For an added protein boost, mix 1 tbsp Greek cream cheese with 1 tbsp almond milk and 1 tbsp vanilla protein powder. Blend and spread on cakes.
