Happy Monday!! Today I am sharing this recipe that I put together for a recent brunch date with one of my dear friends. It seems like she always gets to taste all of my new breakfast time recipes which is great because of course I truly value her seal of approval. This one was a big hit both with her and for me! It involves basic ingredients (as my recipes usually tend to do) but packs a lot of flavor. The icing on the cake of this omelet – Brie. No doubt my favorite cheese, Brie adds a taste that you can’t get with mozzarella or cheddar, in a small bite. Using egg whites in lieu of whole eggs cuts out a lot of additional cholesterol which is better for your heart. I hope you enjoy it as much as I did!
