Pressed Turkey & Sweet Potato Burritos

If you’ve followed our blog for some time, you may remember way back when Erica made Sweet Potato and Avocado Turkey Burritos. I am a big fan of mexican food and of course on Cinco De Mayo (I know, way to post this in a timely manner) it was only fitting to make a fiesta inspired dish. So I pulled up Erica’s recipe and went to work. I only made a few small tweaks and grilled these burritos instead of baking at the end, but it made for another delicious rendition of a fabulous recipe.

I’m so glad to be back in the kitchen without pregnancy nausea!

    I would never think to add sweet potato to a burrito but that sounds amazing! I bet it is so tasty! I’ll have to give it a go soon!
