Quinoa Stuffing

20131108-165726.jpgI am going to start a series of healthy thanksgiving recipes. I love thanksgiving and will no doubt be indulging that day, but it doesn’t hurt to add a little healthy to your table.

The first recipe is a spin on classic stuffing.

You will need:

8 cups cooked white quinoa
3 tbsp butter or olive oil (butter for a little flavor boost)
4 stalks of celery, chopped
1 medium onion, chopped
1 tbsp thyme
1 tbsp garlic
1 tsp sage
Salt and pepper to taste
2 cups vegetable broth
2 egg whites

Start by cooking your quinoa based in the package instructions. Preheat your oven to 350.

Chop the onions and celery and cook with the butter or oil and spices until tender. Add the quinoa to the pot and mix. Pour broth over mixture.

Beat egg whites together and stir into the quinoa mixture.

Pour into an 8 x 8 pan and bake for 40 minutes.

Once out, taste test. Season and add butter as you see fit, especially if you’re cooking for a crowd.
