Fiesta Chicken and Rice

I’m back in the kitchen with another Mexican dish. I love Mexican food, for real, like can’t get enough of it, so, when dinner time rolls around, fiesta comes to mind. The other night, as my mind was going down the fiesta route, I was also taken back to a familiar theme, moms cooking. One dish my mom made often with her good ol Campbell’s soup was chicken and rice and it was my favorite! So, I did the most logical thing and combined my hankering for a fiesta and chicken and rice with fiesta chicken and rice! Even though I still sneak over to her house for a good ol bowl of chicken and rice from time to time, I try to make my own version at home when I can and this one was pretty good.

I like to use my husband as a gauge for recipe success. Although he always tells me whatever I cook tastes good, I can always tell if he really likes it by how many plates he has. Does he go in for seconds, or grab a bowl of cereal after one bowl? Well, with this recipe, he went in for seconds, so it’s safe to say, it’s a keeper.

Next time around, I will add black beans and corn to liven it up a bit, but I would also add a little chili powder if you like it spicy!

    So I never would have thought to add cottage cheese to this dish but what a great ingredient for some extra cheesy flavor and protein! I’m totally adding this to my weekday recipes. Wouldn’t it be so tasty with some fresh corn in the summer? Thanks for sharing, gal!
