The Salsa Chicken Tostadas, were a hit at our house last week. I will admit, the last month or two I have hardly been in the kitchen. We’ve been surviving on take out and random sandwiches (poor family), but sadly the smell and sight of food has been pretty gag worthy for me (thanks first tri!). Luckily, I’m starting to come through the first trimester blah and was able to muster something up in the kitchen. Aside from my usual one track mind in the kitchen (chicken and fish, chicken and fish) I also have another avenue I often go down, Mexican! I love tacos, burritos, beans and rice, anything Mexican I’m there. When it comes to being creative, I often lose any creativity and resort back to old habits…when in doubt, throw some salsa on it!
I needed something easy, well all of my recipes are easy, few ingredients most of which you have on hand. So I grabbed some frozen chicken, popped it in the crockpot with fresh corn, onions, and a whole lot of salsa and left the hard work to the cooker. Set on low for four hours, by that evening I had the perfect topping for tostadas or burritos, tacos, bowls anything!
Since my husband doesn’t love Mexican as much as I do, I built some tostadas so I could pass it off as different to him. Despite his distaste for corn tortillas, he actually liked this recipe and said he would eat it again, win for me.
So, another one for the blog, meaning one to save. I may not be the best food blogger there ever was, but I am thankful for my little corner of the internet to document my kitchen wins. Without it, I would quickly forget something that came together so wonderfully and would stay in my rut of chicken and fish, chicken and fish oh and some veggies most weeknights.
