This isn’t what you would call health food. But, it’s darn delicious.

Sloppy Joe Casserole | Pumps & Push-Ups

Sometimes my 6 foot something or other husband requests that I make something a little heartier than my typical meals. Lately, after I make a dish that I consider healthy, my toddler shuns it and I catch my hubby eating a bowl of cereal after dinner. Apparently, those healthy dishes don’t do the trick for my boys all of the time.

So, this past weekend he requested I make one of his favorites, Sloppy Joe casserole. We love Sloppy Joes around here. If you have ground beef, turkey or even lentils on hand, you can just about always throw them together. Either from scratch with fresh tomatoes or if you’re looking for the easiest way to go, with a little ketchup and worcestershire sauce. I try to make most of my meals from scratch and avoid processed foods as much as possible. But lately, the easy meals have been screaming my name. Ingredients


1 tbsp olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped tomato
1 lb lean ground beef (or ground turkey or lentils for a vegetarian version)
1-2 tbsp of mesquite seasoning (I prefer Trader Joe’s African Smoke)
salt & pepper to taste
1 tbsp worcestershire sauce
1/4 – 1/2 cup of ketchup (or you can mix your favorite BBQ sauce for half)
1 can of biscuit dough (I used Trader Joe’s brand)
1.5 cups of cheddar cheese

Instructions


1. Pre-heat your oven and cook biscuits in a 9 x 9 dish for half of the time noted on the directions of your biscuits (or just until the dough is soft and warm).
2. Toss your onion and bell pepper in the pan with olive oil and cook until soft.
2. Add ground meat and brown.
3. Stir in chopped tomatos and simmer for 2 minutes.
4. Season with salt & pepper and mesquite seasoning.
5. Stir in worcestershire sauce and ketchup.
6. Reduce to low and simmer for 5-10 minutes.
7. Meanwhile, pull out the biscuits and place half of them on a plate.
8. Flatten the remaining biscuits on the bottom of the pan.
9. Spinkle with half of the cheese, then layer the meat mixture on top and top with the remaining cheese.
10. Place the last few biscuits on top.
11. Cook for 10 minutes or until the biscuits are brown and the cheese is melted and bubbling.

Enjoy with a side of steamed broccoli
